- Summary
- Iron deficiency anemia is the most widespread nutritional disorder in the world, affecting more than two billion people. The easiest way to combat the problem is to fortify the flour in bread, but complex social and cultural issues in the Middle East make fortification difficult. Bread has been sacred since ancient times, and many millers refuse to add anything unnatural to their bread because of their beliefs. This program looks at the efforts to introduce fortified flour in Yemen and Egypt, two of the most affected countries.
